Happy Pancake Day! Whether you like them sweet or savoury, we’ve got the perfect recipe for tonight’s stack.
Pancake Day might be our favourite day of the year. Warm stacks of deliciousness smothered with Nutella or honey or cream, enjoyed as a legitimate dinner… what’s not to love?
Pancakes are great because there are endless ways to enjoy them, whether you’re on Team Savoury or Team Sweet. If you’ll be settled down to a stack of your own tonight, here are some of our favourite recipes – give them a try and don’t forget to tweet us your photos!
All these recipes use the same method for making pancakes – you’ve probably honed your own technique but if not, we love this one from BBC Food.
The Classic Crêpe We love a French-style Crêpe Suzette, but this lemon-and-sugar combo is even easier to make. You’ll need thin pancakes for this, so make sure to spread your batter out when cooking. When your pancakes are ready, slide onto a plate and add a squeeze of fresh lemon juice, a sprinkle of sugar and a drizzle of honey. Then roll or fold each pancake and tuck in.
The Veggie Delight If you’re still on that New Year health kick (good work!) and want a more nutritious option, we’ve got you covered. Start by finely dicing a red onion, then fry in a little olive oil until golden and caramalised. In a separate pan, wilt a handful of spinach leaves. When ready, top your pancakes with the spinach and onions and finish with grated Gruyère cheese, some freshly ground black pepper and a sprinkle of red chillies.
The American Short Stack Pancakes are a breakfast rite of passage in the USA, so it’s hardly surprising that the American style tastes so damn good. For perfect American pancakes, add a handful of fresh blueberries to your batter then keep them small and thick in the pan. When they’re ready, stack ‘em up, drizzle with maple syrup and top with more fresh blueberries.
The Sweet and Savoury If you really can’t choose between sweet and savoury… have them both! Go for American style thick pancakes and cook enough for a decent stack. In a separate pan, fry some smoked streaky bacon until it’s crispy then stack everything up on a plate. Drizzle over some maple syrup then finish with some icing sugar – trust us on this one. And if you want to make a real meal out of it, add some scrambled eggs on the side.
The Chocolate Treat Ok, we can’t write a list of pancake recipes without including a chocolatey one. Specifically, chocolate and banana – the perfect pancake pairing. Add some chocolate chips to your pancake batter, then when they’re cooked, go in with a dollop of Nutella, some chopped banana and a sprinkle of chocolate shavings to finish. Yum.
