Pancake Day is one of the best days of the year… or at least, it is if you’re not trying to juggle a love of pancakes with an allergy or intolerance. If you’re dairy or gluten free, pancakes are often off the menu, and that’s just not cool.
Making your pancakes dairy or gluten (or both!) free is really easy, so there’s no need to miss out. Take a look at these three recipes for dairy free, gluten free and dairy AND gluten free pancakes, plus plenty of toppings inspiration… Happy Pancake Day!
Dairy free pancakes
Ingredients
125g plain flour
1 egg
300ml coconut milk

125g gluten free plain flour
1 egg
250ml milk

Ingredients
125g gluten free plain flour
1 mashed banana
250ml coconut milk
Method
Put the flour into a bowl and make a well in the centre, then crack in the egg and add a quarter of the milk. With an electric whisk, combine the mixture to a paste then add another quarter of milk. Whisk until lump free, then add the remaining milk and rest for 20 mins.
Heat a splash of oil in a non-stick pan and pour in a small amount of mixture. Swirl around the pan in a thin layer, cook for a few minutes then flip and cook until golden on the other side. Repeat until you’ve used all the mixture.
Toppings
There are loads of dairy and gluten free toppings out there, but some of our favourites are:
Chopped nuts (walnuts are especially good with banana pancakes)
Fresh berries and maple syrup
Almond butter and dairy-free chocolate spread
Lemon and sugar (such a classic!)
Grilled tomatoes, mushrooms and plant-based yogurt
Sliced avocado and chilli flakes
